Coconut Oil and Nut Butter Fudge

It's easier to improve your diet if you make healthier versions of your favorite treats. So, for all you fellow choco-holics out there, here's my recipe for a coconut oil and nut butter fudge. It's not low calorie, but it is very satisfying and doesn't have any refined sugars or unnatural ingredients.
I got the idea from a recipe on a calendar from my local Natural Grociers, but as I typically do, I've modified the recipe and created variations of it. So here's my version.
Ingredients
1 cup coconut oil
1 cup nut butter (I usually use fresh ground, organic almond butter, but I've also used organic peanut butter)
1/2 cup honey
1/3 cup cocoa powder
1 teaspoon real vanilla extract
1-2 cups of coarsely chopped nuts (my favorite are roasted and salted macadamia nuts, but I also made it with walnuts; if using raw nuts, I'd toast them before adding them for better flavor, and if the nuts aren't salted, I'd add a pinch of natural salt to the recipe to enhance the flavor)
Directions
Place all the ingredients except the nuts into a mixing bowel and blend together with an electric mixer until smooth. I like to mix it on high speed so it gets light and creamy.
Fold in the chopped nuts and place into an 8x8 baking pan.
Refridgerate until firm and cut into squares.
Keep in the fridge until ready to serve as the coconut oil melts at room temperature.
These are decadently delicious. Experiment with different nuts and nut butters.
